At the butcher shop of tomorrow, customers will find a comprehensive selection of fresh meat – both at the fresh food counter and in the coolers. The assortment includes regional products as well as specialties from all over the world. Furthermore, the butcher shop of tomorrow offers products from organic farming as well as lactose-free and gluten-free products for people with allergies.
At the real,- Future Store, great importance is attached to the traditional butcher’s skills – and to transparency. A large glass window allows customers to watch production. In the curing oven at the fresh food counter, about 20 different types of sliced meats are prepared and then gently cooled. This ensures high freshness and quality. In addition, hot snacks and daily special dishes for takeaway are offered at the hot food counter.
Smart Quality Control
In addition, the butcher shop of tomorrow also uses the Radio Frequency Identification technology (RFID). For this purpose, each product in the Smart Freezer is tagged with a Smart Chip that contains a unique product identifier (EPC). The objective is to exactly plan the production of fresh meat at the store and to further optimize quality assurance. Based on the product information stored in the RFID database individual products can be identified via the EPC, for example if they approach their best-before date. Employees can then take action and remove a specific product from the Smart Freezer in due time and properly dispose of it. In addition, the inventories can be precisely controlled at the item level. If the quantity of the fresh food products on stock drops below a specified level, the staff can produce new merchandise and restock the freezer. The customers will thus always find the desired meat products of the highest quality and in sufficient quantities.
